Makki Di Roti

One of the most loved Punjabi delicacies; Makki ki roti happens to be the quintessential Indian flatbread, which is delightful and is prepared on special occasions and festivals. It is made with just a few ingredients like maize flour, butter, ghee, and fenugreek leaves. This simple flatbread recipe tastes best when served with rich and creamy gravies and white butter. Making authentic Indian delicacies might seem like a daunting task but they are easy to make. You just need to follow some simple steps and you are ready to delve in the goodness of some delicious Makki ki rotis. If you don’t have fenugreek leaves, you do not need to worry about it, as the dish can be made without them also and still tastes good. 2 cups maize flour
1 fistful plain flour
1 tbsp. oil
salt to taste
water to knead
Mix maize flour, oil and salt.
Knead in a soft pliable dough, adding very little water at a time.
When the dough is very smooth and soft, bread a lump.
Shape into a ball, flatten and pat with palm, to make a thin roti.
Use dry plainflour to help. Or roll with a rollint pin.
Take care to dust with flour and lift and turn to avoid sticking.
Place on a heavy iron or earthen griddle and roast till crisp.
Repeat on both sides. Repeat for all rotis.
Cover and line with napkins to keep warm.
Drizzle with ghee or butter if desired.
Serve hot with sarson ka saag and slice of onion and lime.

How to make Makki Ki Roti
Step 1 Sift the flour and mix all the ingredients
Start with sifting the maize flour with salt. Once, you have mixed the flour with salt, add the finely chopped fenugreek leaves along with red chilli powder and ghee. Mix all the ingredients completely.
Step 2 Knead a smooth dough and make the roti
Next, add hot water in the maize flour and fenugreek leaves mixture, and knead with soft hands. After making a soft dough, take equal portions of the dough and make medium sized balls. Dust the dough with some flour and flatten it into a roti.
Step 3 Cook the Makki ki roti
Now, put a tawa or a pan over medium flame and let it heat. When the tawa is hot enough, put the roti on it and cook. You don’t need to apply ghee, oil or any kind of butter on it, as they are already present in the dough, which is enough to grease it.
Step 4 Note
If you think, the roti is too dry, you can pour some drops of melted ghee and cook on both sides. When the roti is cooked, transfer in a serving plate and apply butter on the rotis. Serve hot with sarson ka saag.
